Description
A refreshing and protein-packed dish combining savory flavors of grilled lamb kofta with a vibrant fresh herb salad and creamy homemade tzatziki.
Ingredients

1 lb ground lamb
1 small onion, finely grated
3 cloves garlic, minced
1 tablespoon fresh parsley, chopped
1 tablespoon fresh mint, chopped
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
½ teaspoon ground cinnamon
Salt and pepper, to taste
Wooden skewers (soaked in water for 30 minutes if grilling)
4 cups mixed greens (arugula, spinach, or romaine)
1 cup cherry tomatoes, halved
1 cucumber, sliced
½ red onion, thinly sliced
½ bell pepper, sliced
1 cup Greek yogurt, full-fat
1 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh dill, chopped
1 tablespoon fresh lemon juice
Salt and pepper, to taste
Instructions
In a mixing bowl, combine ground lamb, grated onion, minced garlic, parsley, mint, cumin, coriander, smoked paprika, cinnamon, salt, and pepper. Mix well until fully incorporated.
Divide the lamb mixture into 8 equal portions. Shape each portion around a skewer into long, oval-shaped koftas.
Preheat your grill or grill pan over medium-high heat. Grill the lamb kofta for about 10-12 minutes, turning occasionally, until browned and cooked through.
In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Stir until well blended and refrigerate.
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and bell pepper. Toss gently to mix.
On a plate, create a bed of the fresh herb salad and place the grilled lamb kofta on top. Drizzle the tzatziki sauce over the kofta and salad.
