  1. In a medium saucepan, melt the butter or coconut oil over medium heat. Add the diced apples, lemon juice, cinnamon, and maple syrup. Sauté for about 5-7 minutes until the apples soften and release their natural juices. Stir in the cornstarch and cook for an additional 1-2 minutes until the mixture thickens and becomes syrupy. Remove from heat and let cool completely to prevent steaming the rice paper during assembly.
  2. Fill a shallow dish with warm water, ensuring it’s not boiling. Dip one rice paper sheet into the water for about 10-15 seconds, or until it becomes soft and pliable but not overly soggy. Carefully lay it flat on a clean, damp kitchen towel or cutting board to absorb excess water.
  3. Place 2 tablespoons of the cooled apple mixture in the center of the softened rice paper sheet. Fold the bottom edge over the filling, then fold in the sides, and roll it tightly away from you to form a neat roll. Make sure the filling is sealed well inside. Repeat this process with the remaining rice paper sheets and apple filling, ensuring you keep the rolls covered with a damp cloth to prevent them from drying out.
