Ingredients
Scale:
1 lb ground chicken
1/2 cup breadcrumbs (use whole wheat for a healthier option; gluten-free breadcrumbs can also work)
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
4 cloves garlic, minced
1/4 cup onion, finely chopped
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1/4 cup marinara sauce
1/4 cup grated Parmesan cheese (for topping)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan cheese, parsley, minced garlic, chopped onion, egg, salt, pepper, and Italian seasoning. Mix until all ingredients are well combined.
Transfer the mixture to a baking dish or a lined loaf pan. Shape it into a loaf.
Spread the marinara sauce evenly over the top of the meatloaf. Sprinkle with the remaining 1/4 cup of Parmesan cheese.
Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
Remove the meatloaf from the oven and let it rest for 10 minutes.
Slice the meatloaf and garnish with fresh parsley before serving.
