1 pound ribeye or sirloin steak, cut into cubes
Salt and pepper to taste
1 tablespoon olive oil
1 pound baby potatoes, halved
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon garlic herb seasoning
Fresh parsley, chopped (for garnish)
Instructions
Season the cubed steak generously with salt and pepper. Let the seasoned steak sit for about 15 minutes at room temperature.
In a large cast iron skillet, heat 1 tablespoon of olive oil over medium heat. Add the halved baby potatoes, cut side down. Cook for about 5-7 minutes, or until they are golden brown and tender.
Reduce the heat to low and add the butter to the skillet. Once melted, stir in the minced garlic and garlic herb seasoning. Cook for another 2-3 minutes.
Push the potatoes to one side of the skillet. Increase the heat to medium-high, then add the seasoned steak cubes to the empty space in the skillet. Sear the steak for about 3-4 minutes on each side.
