Ingredients
Scale:
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk (or 1 cup milk with 1 tablespoon lemon juice or vinegar for a quick substitute)
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
Maple syrup (optional)
Fresh berries (optional)
Whipped cream (optional)
Chocolate chips (optional)
Powdered sugar (optional)
Almond slices or chopped nuts for added texture (optional)
Nutella or fruit sauces for a decadent twist (optional)
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until fully blended.
Pour the wet ingredients into the dry ingredients. Gently fold the mixture with a spatula until just combined.
Let the batter rest for about 5 minutes to allow the baking powder to activate.
Preheat a non-stick griddle or skillet over medium heat. Lightly grease it with butter or cooking spray.
Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles start to form on the surface, around 2-3 minutes.
Carefully flip the pancakes using a spatula and cook for another 1-2 minutes until the second side is golden brown.
Stack the pancakes on a plate and serve immediately with your choice of toppings.
