1 cup rolled oats
1/2 cup nut butter (almond or peanut butter)
1/4 cup honey or maple syrup
1/4 cup ground flaxseed or chia seeds
1/2 cup chocolate chips (optional)
1 teaspoon vanilla extract
2 tablespoons water (adjust based on consistency)
Shredded coconut (optional)
Chopped nuts or seeds (optional)
Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed or chia seeds, and chocolate chips. Stir until they are well mixed.
Add the nut butter and honey (or maple syrup) to the dry ingredients. Pour in the vanilla extract and mix thoroughly until everything is evenly coated.
If the mixture is too dry, gradually add water, one tablespoon at a time, until the desired consistency is reached.
Use your hands to form small balls, about 1 inch in diameter. Roll the balls in shredded coconut or chopped nuts if desired.
Place the energy balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
