1 cup fresh apricot preserves
1 teaspoon dried thyme
1 teaspoon honey (optional)

2 large eggs, beaten

Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, blend the softened goat cheese, apricot preserves, dried thyme, and honey (if using), until smooth and creamy.
In a separate bowl, set up a breading station: place the beaten eggs in one bowl and the breadcrumbs in another. Season the breadcrumbs with salt and pepper.
