A quick, flavorful, and satisfying meal combining grilled chicken, sweet corn, and a variety of fresh toppings.

1 lb boneless, skinless chicken breasts
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
Salt and pepper to taste
2 ears of fresh corn, grilled and kernels removed
1/4 cup diced red onion
1/4 cup crumbled feta cheese
1/4 cup chopped cilantro
2 tablespoons mayonnaise
1 tablespoon lime juice
1 teaspoon smoked paprika
1 cup jasmine rice or brown rice
2 cups water or chicken broth
1 ripe avocado
1/4 cup Greek yogurt
2 tablespoons lime juice
Chopped lime wedges
Sliced jalapeños
Fresh tomatoes, diced
Additional cilantro for garnish
Instructions
In a medium saucepan, combine 1 cup of rice and 2 cups of water (or chicken broth for added flavor). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.
In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 15 minutes.
Preheat your grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown. Remove from heat and let it rest for a few minutes before slicing.
In a bowl, combine grilled corn kernels, diced red onion, crumbled feta, chopped cilantro, mayonnaise, lime juice, and smoked paprika. Mix well and season with salt and pepper to taste.
In a blender or food processor, combine the avocado, Greek yogurt, lime juice, and salt. Blend until smooth and creamy. If the dressing is too thick, add a little water to reach your desired consistency.
In a serving bowl, layer the cooked rice as the base. Top with sliced grilled chicken, street corn salad, and drizzle with avocado dressing. Add your choice of fresh vegetable toppings like diced tomatoes, jalapeños, and extra cilantro.
Squeeze fresh lime juice over the top and serve immediately while warm.
