½ cup vegetable oil, or melted butter
1 teaspoon vanilla extract
8 oz cream cheese, softened
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh strawberries, diced
Whipped cream (optional)
Extra fresh strawberries (for garnish)
Maple syrup (for drizzling)
Instructions
In a medium bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until well combined. Gently fold in the diced strawberries and set aside.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the eggs, milk, vegetable oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
Preheat your waffle iron according to the manufacturer's instructions.
Lightly grease the waffle iron. Pour about 1/2 cup of waffle batter into the center, create a well, spoon in the cream cheese filling, and top with more batter. Cook for 5–7 minutes until golden brown.
Carefully remove the waffles and repeat with remaining batter and filling.
