Instructions

  1. In a large mixing bowl, combine the pumpkin puree, mascarpone cheese, powdered sugar, vanilla extract, and pumpkin pie spice. Use an electric mixer on medium speed to blend until smooth and creamy, about 2-3 minutes.
  2. In a separate bowl, whip the heavy cream on medium-high speed until stiff peaks form. This should take about 3-5 minutes. Gently fold the whipped cream into the pumpkin mixture until well combined.
  3. In a shallow dish, combine the brewed coffee and coffee liqueur (if using). Stir gently to mix. Allow it to cool completely.
  4. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Arrange a layer of the soaked ladyfingers in the bottom of a 9x9-inch dish.
  5. Spread half of the pumpkin mixture over the layer of ladyfingers, smoothing it out evenly. Repeat the process with another layer of coffee-dipped ladyfingers followed by the remaining pumpkin mixture.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
  7. Just before serving, dust the top of the tiramisu with cocoa powder and sprinkle with additional pumpkin pie spice. Cut into squares and enjoy!
