A vibrant and nutritious dip that combines the earthiness of beetroot with the creaminess of chickpeas, perfect for Mediterranean appetizers or as a colorful spread for parties.
Ingredients
Scale:
1 cup canned chickpeas (drained and rinsed)
1 medium beetroot (cooked and peeled)
2 tablespoons tahini
2 tablespoons olive oil
1 tablespoon lemon juice (freshly squeezed)
1 clove garlic (minced)
Salt to taste
Water (as needed for consistency)
Chopped fresh parsley (optional)
Drizzle of olive oil (optional)
Pumpkin seeds or sesame seeds (optional)
Instructions
Prepare the beetroot: If using raw beetroot, wash it thoroughly, wrap it in aluminum foil, and roast it in a preheated oven at 400°F (200°C) for about 45-60 minutes, or until tender. Check for doneness by inserting a fork; it should slide in easily. Alternatively, boil it for 30-40 minutes until fork-tender. Once cooked, let it cool, peel, and chop into smaller pieces to facilitate blending.
In a food processor, combine the cooked beetroot, rinsed chickpeas, tahini, olive oil, lemon juice, and minced garlic. Process until smooth, pausing occasionally to scrape down the sides of the bowl to ensure all ingredients are evenly blended.
If the hummus appears too thick, add water one tablespoon at a time while blending until you achieve your desired consistency. Aim for a creamy texture that's easy to spread; it should flow slightly when spooned.
Taste the hummus and adjust the seasoning by adding salt as needed. You can also add more lemon juice for brightness, or garlic for extra flavor. Remember that flavors often develop and intensify after resting, so taste again just before serving.
Transfer the beetroot hummus to a serving bowl. Use a spoon to create a small well in the center, which will hold the drizzle of olive oil.
Drizzle with additional olive oil and sprinkle your choice of toppings, such as chopped parsley or seeds, for added texture and flavor.
