Ingredients

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup chocolate chips (semi-sweet or milk chocolate)
- 1 cup buttermilk (or milk with 1 tablespoon vinegar)
- ½ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cherries, pitted and halved (if using frozen, do not thaw)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well blended.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Gently fold in the chocolate chips and halved cherries until evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan, spreading it evenly to the edges.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar if desired and slice into squares. Enjoy your cake!
