Instructions

  1. In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and add olive oil. Mix until a dough forms.
  3. Turn the dough onto a lightly floured surface. Knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour.
  5. While the dough is rising, heat the butter and olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook for about 20-25 minutes.
  6. Preheat your oven to 450°F (230°C).
  7. Once risen, punch down the dough and turn it out onto a floured surface. Divide the dough into two pieces and roll each into an oval or rectangle shape.
  8. Place the rolled-out dough onto a baking sheet or pizza stone. Bake for 8-10 minutes.
  9. Remove the flatbread from the oven. Evenly distribute the caramelized onions and sprinkle with goat cheese.
  10. Return the flatbread to the oven for an additional 5 minutes.
  11. Drizzle with balsamic glaze and garnish with extra thyme if desired. Slice and serve warm.
