  1. Preheat your waffle maker to medium-high heat.
  2. In a medium bowl, whisk together the almond flour, baking powder, salt, and black pepper.
  3. In a separate bowl, beat the eggs until light and frothy. Add the cottage cheese and shredded cheddar, mixing until well combined.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Lightly grease the waffle maker with non-stick spray or butter. Pour approximately 1/3 cup of batter into the waffle maker for each chaffle.
  6. Close the lid and cook for about 4-5 minutes, or until the chaffles are golden brown and crispy.
  7. Carefully remove the chaffles from the waffle maker and set them aside on a wire rack to cool slightly. Serve warm.
