  2. Stir in the egg yolk and add ice water one tablespoon at a time until the dough comes together in a cohesive ball. Shape the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.

  4. On a floured surface, roll out the chilled dough into a 12-inch circle to fit a 9-inch pie pan. Transfer the dough gently to the pan, trim the edges, and prick the bottom with a fork.
