Ingredients
Scale:
1 baguette or ciabatta loaf, sliced into 1/2-inch thick pieces
1/4 cup olive oil, plus more for drizzling
2 cloves garlic, peeled and halved
8 ounces burrata, at room temperature
4 ounces prosciutto, thinly sliced
2 ripe peaches, pitted and thinly sliced
A handful of basil or mint leaves, for garnish
Balsamic glaze, optional, for drizzling
Salt and pepper, to taste
Instructions
Preheat your oven to 400°F (200°C).
Arrange the sliced baguette or ciabatta on a baking sheet. Brush both sides lightly with olive oil, then season with salt and pepper.
Bake in the preheated oven for about 8-10 minutes, or until golden brown and crisp. Flip the bread halfway through for even toasting.
Once toasted, rub the cut side of the garlic cloves over the top of each slice.
On each toasted slice of bread, spoon a generous amount of burrata and use a fork to break it up slightly.
Lay strips of prosciutto over the burrata.
Top each crostini with a few slices of fresh peach.
Scatter fresh herbs over the top and drizzle lightly with additional olive oil and balsamic glaze, if using.
Enjoy immediately while the crostini are still warm and the burrata is creamy.
