2 pounds boneless chicken thighs, cut into bite-sized pieces
1 tablespoon garlic ginger paste
1 teaspoon salt
1 medium onion, finely chopped
1 can (14 oz) crushed tomatoes
1 cup coconut milk or heavy cream
2 tablespoons garam masala
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon turmeric powder
1 teaspoon chili powder
2 tablespoons vegetable oil
Fresh cilantro, for garnish
1 tablespoon honey or sugar (optional)
Fresh lime wedges (optional)
Instructions
Start by seasoning the boneless chicken thighs with garlic ginger paste and salt. Mix well and let it marinate for at least 15 minutes.
While the chicken is marinating, heat vegetable oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.
Add the crushed tomatoes to the skillet, followed by the garam masala, ground cumin, ground coriander, turmeric powder, and chili powder. Stir well and let the mixture cook for another 5 minutes until fragrant.
Transfer the tomato-onion mixture to the crockpot. Add the marinated chicken and coconut milk or heavy cream. Stir to combine all the ingredients thoroughly.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
