This recipe combines the mild flavor of tilapia with a crunchy Parmesan crust, creating a delightful meal that is both healthy and satisfying.
Ingredients
Scale:
4 tilapia fillets (about 6 ounces each)
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup all-purpose flour
2 large eggs
2 tablespoons olive oil
Lemon wedges (for serving)
Fresh parsley, chopped (for serving)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a large bowl, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix thoroughly until well combined.
In another shallow dish, place the flour. In a separate bowl, whisk the eggs until well-beaten.
Take each tilapia fillet and coat it first in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat it with the breadcrumb mixture, pressing lightly to ensure the crumbs adhere well.
Place the breaded tilapia fillets on the prepared baking sheet. Drizzle the tops with olive oil.
Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Remove from the oven and let it cool slightly. Serve with lemon wedges and a sprinkle of fresh parsley.
