2 large onions, thinly sliced
1 cup grated Parmesan cheese
1 cup gluten-free breadcrumbs (or regular breadcrumbs)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika (optional)
Salt and pepper, to taste
2 tablespoons olive oil
For the dip (optional): 1/2 cup sour cream, 1 tablespoon fresh chives, chopped, 1 teaspoon lemon juice, salt and pepper, to taste
Instructions
Preheat your oven: Set your oven to 400°F (200°C) to ensure it is fully heated before baking the onion chips.
Prepare the onions: Slice the onions very thinly using a sharp knife or a mandoline for uniform thickness.
Mix the dry ingredients: In a large bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper.
Coat the onions: Place the sliced onions in another bowl. Drizzle the olive oil over the onions and toss them gently to ensure they are evenly coated.
Arrange on a baking sheet: Line a baking sheet with parchment paper and lay the coated onion chips in a single layer.
Bake: Place the baking sheet in the preheated oven. Bake for about 20-25 minutes, checking halfway through. Flip the chips for even browning.
Cool: Once baked, remove the chips from the oven and allow them to cool for a few minutes on the baking sheet.
