1 lb ground beef
1 cup shredded cheddar cheese
1/2 cup finely chopped onion
1/4 cup chopped pickles
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
10-12 eggroll wrappers
Oil for deep frying (vegetable or canola oil works best)
For the Dipping Sauce: 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon yellow mustard, 1 teaspoon Worcestershire sauce, Salt and pepper to taste
Instructions
In a large skillet over medium heat, cook the ground beef until browned, about 7-10 minutes. Drain excess fat and return the skillet to the heat.
Add the chopped onion to the skillet and cook until softened, about 3 minutes. Stir in the pickles, ketchup, mustard, garlic powder, onion powder, salt, and pepper. Mix well and let cool slightly.
Lay an eggroll wrapper on a clean surface, place about 2 tablespoons of the beef mixture in the center, dampen the edges with water, and roll up tightly to seal.
In a deep frying pan, heat about 2 inches of oil to 350°F (175°C).
Carefully add 3-4 eggrolls at a time to the hot oil, frying for about 3-4 minutes per side or until golden brown and crispy.
In a small bowl, mix together mayonnaise, ketchup, mustard, Worcestershire sauce, salt, and pepper until smooth.
