Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  3. Once the beef is cooked, drain excess fat if necessary. Stir in the taco seasoning mix, black beans, corn, and diced tomatoes. Mix well and let simmer for about 5 minutes.
  4. While the filling simmers, arrange your crunchy taco shells upright in a baking dish.
  5. Spoon the filling generously into each taco shell, packing them well. Sprinkle shredded cheese over the top of each filled taco.
  6. Place the baking dish in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly, and the taco shells are crispy.
  7. While the tacos are baking, prepare your toppings: shred your lettuce, dice your tomatoes, and slice your avocado.
  8. Carefully remove the baked tacos from the oven. Let them cool slightly before serving to avoid burns. Garnish with lettuce, diced tomatoes, avocado, and a dollop of sour cream or Greek yogurt.
