This one-pot chicken meal combines juicy chicken, tender orzo pasta, and vibrant Tuscan-inspired flavors into a creamy garlic sauce. It’s an easy weeknight dinner that will surely impress your family and friends with its Mediterranean chicken flavors and rich textures.

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup orzo pasta
4 cups chicken broth (low-sodium is preferred)
2 tablespoons olive oil
1 medium onion, finely chopped
4 cloves garlic, minced
1 cup heavy cream
1 cup spinach, fresh or frozen
1/2 cup sun-dried tomatoes, chopped
1/2 cup grated Parmesan cheese
Fresh basil leaves for garnish
Instructions
In a bowl, combine the chicken pieces with Italian seasoning, salt, and pepper.
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken and sauté for about 5-7 minutes until golden brown and cooked through.
In the same skillet, add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes.
Pour in the chicken broth and bring it to a boil. Stir in the orzo pasta, reduce the heat, and let it simmer for about 10-12 minutes.
Once the orzo is cooked, reduce the heat to low. Stir in the heavy cream, spinach, sun-dried tomatoes, and Parmesan cheese.
Return the browned chicken to the skillet and stir to combine. Cook for another 2-3 minutes.
Remove the skillet from the heat and garnish with fresh basil leaves before serving.
