Ingredients
Scale:
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon chili powder (adjust to taste)
1 teaspoon salt
2 tablespoons oil (vegetable or coconut)
1 large onion, finely chopped
4 cloves garlic, minced
1 tablespoon ginger, minced
1 can (14 oz) crushed tomatoes
1 cup coconut milk (for a creamy texture)
1 tablespoon lemon juice
Fresh cilantro, chopped for garnish (optional)
Heavy cream (for extra richness and a pretty presentation, optional)
Instructions
In a large skillet, heat the oil over medium heat. Wait until it's shimmering, which usually takes about 1-2 minutes.
Add the chopped onion to the skillet, cooking until golden brown, about 5-7 minutes. Stir occasionally to avoid burning.
Mix in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.
Add the cumin, coriander, turmeric, garam masala, chili powder, and salt. Stir well and let the spices toast for about 1 minute.
Pour in the crushed tomatoes, stirring to combine. Let the mixture simmer for about 10 minutes.
Slowly add the coconut milk, stirring until fully incorporated. Allow the sauce to simmer for an additional 5-10 minutes.
Stir in the lemon juice for a touch of brightness. Taste and adjust seasoning if necessary.
If desired, top with fresh cilantro and a drizzle of cream for added richness. Serve hot with naan or over rice.
