8 ounces penne pasta
1 pound large shrimp, peeled and deveined
2 cups broccoli florets
2 tablespoons olive oil
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter
2 cloves garlic, minced
Salt and pepper, to taste
Chopped parsley, for garnish
Instructions
In a large pot of salted boiling water, add the penne pasta and cook according to package instructions until al dente, which typically takes about 10-12 minutes. Stir occasionally to prevent sticking.
During the last 3-4 minutes of pasta cooking, add the broccoli florets to the pot.
Once the pasta and broccoli are cooked, drain them and set aside. Reserve about 1/2 cup of the pasta water for later use.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
