2 cups whole milk
1 cup heavy cream
1 cup granulated sugar
4 large egg yolks
2 teaspoons vanilla extract
2 tablespoons cornstarch

1 package of phyllo dough (16 oz), thawed
1 cup unsalted butter, melted
2 cups mixed nuts (walnuts, pistachios, or almonds), finely chopped
1 teaspoon ground cinnamon
1 cup honey
1/2 cup water
1/4 cup granulated sugar
Chopped pistachios for garnishing
Honey drizzle for garnishing
Instructions
In a medium saucepan, combine the milk, heavy cream, and half of the sugar (1/2 cup). Heat over medium heat until it just begins to simmer, stirring occasionally to prevent sticking.
In a separate bowl, whisk together the egg yolks, remaining sugar (1/2 cup), cornstarch, and salt until smooth.
Gradually add the hot milk mixture into the egg yolk mixture, whisking constantly to avoid curdling the eggs. Once combined, return the mixture to the saucepan and heat it again while whisking.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes).
Remove from heat and stir in the vanilla extract. Let the custard cool, then refrigerate for at least 2 hours to set properly.
Preheat your oven to 350°F (175°C). Brush a 9x13 inch baking dish with melted butter.
Unroll the phyllo dough and cover it with a damp towel. Layer 8 sheets of phyllo dough in the dish, brushing each layer generously with melted butter.
In a bowl, mix the chopped nuts with ground cinnamon. Sprinkle a third of the nut mixture evenly over the top of the phyllo layers.
Continue layering 4 sheets of phyllo dough, again brushing with butter, followed by another third of the nut mixture. Repeat this until all nuts are used, finishing with 8 layers of phyllo dough.
Cut the baklava into diamond or square shapes using a sharp knife. Bake in the preheated oven for 45-50 minutes or until golden brown.
While baklava is baking, combine honey, water, and sugar in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes.
Once the baklava is done baking, immediately pour the cooled syrup over it, ensuring it seeps into the layers. Allow to cool completely.
Once the custard is set and baklava has cooled, cut the baklava into small pieces. In individual dessert cups, layer custard and pieces of baklava, alternating as desired.
Top with chopped pistachios and a drizzle of honey.
