Bright, colorful, and packed with nutrients, this delightful side dish combines the freshness of raw vegetables with the sweet crunch of apples. The salad is not only visually appealing but also incredibly easy to prepare, making it perfect for summer picnics, family gatherings, or a quick lunch at home.
Ingredients
Scale:
2 cups fresh broccoli florets
2 cups fresh cauliflower florets
1 large apple (preferably a tart variety like Granny Smith), diced
1/2 cup red or purple grapes, halved (optional)
1/4 cup chopped walnuts or pecans (optional)
1/4 cup shredded carrots (for color and sweetness)
1/2 cup plain Greek yogurt
1/4 cup mayonnaise
2 tablespoons honey or maple syrup (for a vegan option)
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Rinse the broccoli and cauliflower florets thoroughly under cold water to remove any dirt or pesticides. Cut them into bite-sized pieces to ensure even mixing and easy eating.
Core and dice the apple into small cubes. There’s no need to peel it unless you prefer it that way, as the skin adds color and fiber.
In a large bowl, combine the broccoli, cauliflower, diced apple, halved grapes, chopped nuts, and shredded carrots. Toss gently to combine all ingredients evenly.
In a separate bowl, whisk together the Greek yogurt, mayonnaise, honey or maple syrup, apple cider vinegar, and Dijon mustard until smooth. Season with salt and pepper to taste.
Pour the creamy dressing over the salad mixture and stir well to coat all the ingredients evenly.
Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.
Give the salad a good stir before serving. Taste and adjust seasoning if necessary.
