Ingredients
Scale:
1 cup almond flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sweetener of choice (such as stevia or coconut sugar)
1 cup cottage cheese (preferably low-fat or fat-free)
2 large eggs
1 teaspoon vanilla extract
1/4 cup melted coconut oil or unsweetened applesauce
1/4 cup dark chocolate chips (optional)
Chopped nuts (like walnuts or pecans) (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper.
In a mixing bowl, combine the almond flour, cocoa powder, baking powder, salt, and sweetener. Whisk until evenly mixed.
In another bowl, blend the cottage cheese until smooth.
Add the eggs, vanilla extract, and melted coconut oil (or applesauce) to the cottage cheese. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the dark chocolate chips and any chopped nuts you prefer.
Spread the batter evenly in the prepared baking pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Once cooled, cut into squares and enjoy your Cottage Cheese Protein Brownies.
