1 ½ cups coconut yogurt
½ cup cashews (soaked in water for at least 2 hours and drained)
¼ cup maple syrup
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 tablespoon melted coconut oil
Fresh fruits (such as berries, banana slices, or mango slices)
Shredded coconut (unsweetened)
Dark chocolate shavings
Instructions
In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and a pinch of salt. Stir the mixture with a fork or spatula until it resembles wet sand.
Press the mixture firmly into the bottom of mini tart pans or a lined muffin tin. Place in the refrigerator to set while you prepare the filling.
In a blender or food processor, combine the coconut yogurt, soaked cashews, maple syrup, lemon juice, vanilla extract, and melted coconut oil. Blend until completely smooth.
