4 cups all-purpose flour
1 ½ cups warm water (about 110°F)
1 teaspoon active dry yeast
1 ½ teaspoons salt
1 cup fresh basil pesto (store-bought or homemade)
1 cup roasted vegetables (zucchini, bell peppers, eggplant)
8 oz fresh mozzarella cheese, sliced
1 large tomato, sliced
Fresh arugula or spinach leaves
Olive oil for drizzling
Balsamic glaze for drizzling (optional)
Instructions
In a large mixing bowl, combine 1 ½ cups warm water and 1 teaspoon of active dry yeast. Let it sit for about 5 minutes until foamy.
Add 4 cups of all-purpose flour and 1 ½ teaspoons of salt to the yeast mixture. Mix until well combined; the dough will be sticky and rough in appearance.
Cover the bowl with plastic wrap and let it rest at room temperature for 12 to 18 hours.
Flour your work surface and gently turn the dough out. Divide it in half and shape each half into a rough rectangle.
Preheat your oven to 450°F (232°C). Place a baking stone or an inverted baking sheet inside to preheat.
Carefully slide the ciabatta onto the preheated stone or baking sheet. Bake for 20-25 minutes, until golden brown.
Remove from the oven and let cool on a wire rack.
Slice the cooled ciabatta horizontally. Spread a generous layer of fresh basil pesto on the cut sides.
Layer with sliced mozzarella, roasted vegetables, tomato slices, and arugula. Drizzle with olive oil and balsamic glaze if desired.
Close the sandwich and press down gently. Cut into portions and serve immediately.
