Ingredients
Scale:
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
2 tablespoons granulated sugar
1 ¼ cups milk (or buttermilk for extra fluffiness)
1 large egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Maple syrup
Fresh fruits (berries, bananas, etc.)
Whipped cream
Chocolate chips
Nut butter
Powdered sugar for a sweet dusting
Yogurt for a creamy addition
Instructions
In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Whisk together until well blended.
In another bowl, beat the egg until frothy, then add the milk, melted butter, and vanilla extract. Whisk until combined and smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
The batter should be thick but pourable. Adjust with milk or flour as needed.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
For each pancake, pour about ¼ cup of batter onto the skillet. Cook until bubbles form and edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes.
Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep warm.
