1 tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup milk (whole or any preferred non-dairy milk)
2 large eggs
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup melted butter or coconut oil
1/4 cup granulated sugar (for topping)
1 tablespoon cinnamon (for topping)
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it lightly or lining it with muffin liners.
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, sugar, vanilla extract, and melted butter until smooth.
Combine Both Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold the mixtures together.
Fill Muffin Tin: Using a spoon or ice cream scoop, fill each muffin cup about 3/4 full with the batter.
Prepare Cinnamon Sugar Topping: In a small bowl, mix the granulated sugar and cinnamon together. Sprinkle over the tops of each muffin.
Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until golden brown.
Cool Slightly: Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
