1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 cup buttermilk
2 cups peeled and diced apples (such as Granny Smith or Honeycrisp)
1 cup powdered sugar, sifted
2-3 tablespoons milk
½ teaspoon vanilla extract for glaze
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.
In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, ground cinnamon, salt, and granulated sugar.
In a separate bowl, cream the softened butter using an electric mixer on medium speed until light and fluffy. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract until fully incorporated.
Gradually add the dry ingredient mixture to the butter mixture alternating with the buttermilk, mixing until just combined.
