2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1/4 cup olive oil, preferably extra virgin
3 tablespoons lemon juice (freshly squeezed)
4 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper, freshly ground
1/4 teaspoon cayenne pepper (optional)
Wooden or metal skewers
Pita bread or flatbreads (for serving)
Fresh vegetables (e.g., bell peppers, red onion, zucchini, cherry tomatoes) (for serving)
Homemade kebab sauce (yogurt-based or tahini sauce) (for serving)
Fresh herbs (e.g., parsley or cilantro) (for serving)
Instructions
In a large bowl, whisk together olive oil, lemon juice, garlic, smoked paprika, cumin, oregano, salt, black pepper, and cayenne pepper.
Add the cubed chicken breasts to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, ideally up to 2 hours or overnight.
If using wooden skewers, soak them in water for at least 30 minutes.
Preheat your grill to medium-high heat (about 400°F). Thread the marinated chicken onto the skewers, leaving a little space between each piece.
Grill the skewered chicken for approximately 10-12 minutes, turning occasionally, until cooked through and has nice grill marks.
Remove the kebabs from the grill and let them rest for 5 minutes before serving.
