2 cups mashed sweet potatoes (about 2 medium sweet potatoes, peeled and cubed)
1/2 cup shredded cheese (cheddar, mozzarella, or a cheese of your choice)
1/4 cup finely chopped green onions (both the white and green parts)
Cooking spray or olive oil for greasing the baking sheet
Instructions
Preheat your oven to 400°F (200°C).
Peel the sweet potatoes and cut them into chunks. Boil them in a pot of salted water for about 15-20 minutes, or until fork-tender. Drain and mash them in a large bowl until smooth.
To the mashed sweet potatoes, add the shredded cheese, green onions, garlic powder, salt, black pepper, and paprika. Stir until well combined.
Using your hands or a small scoop, form the mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
In a shallow dish, combine the breadcrumbs and grated Parmesan cheese. Roll each sweet potato ball in the breadcrumb mixture until fully coated.
Lightly spray the tops of the puffs with cooking spray or drizzle with olive oil.
Bake for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
Remove the puffs from the oven and let them cool for a few minutes. Serve warm.
