  1. In a large mixing bowl, combine the all-purpose flour and salt. Blend in the cold cubed butter until the mixture resembles coarse crumbs.
  2. Gradually add the cold water, mixing until the dough begins to come together. Avoid overmixing. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the spinach to the skillet and cook until wilted, approximately 3-4 minutes. Remove from heat and let cool slightly.
