Cheesy corn fritters are a delightful treat that perfectly blend the sweetness of corn with the richness of cheese. These crispy corn fritters are easy to make and serve as a fantastic savory snack or appetizer.

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup milk (or non-dairy milk)
1 large egg (or flax egg)
1 cup fresh or frozen corn kernels
1 cup shredded cheese (cheddar or any cheese of your choice)
1/4 cup finely chopped green onions
Vegetable oil (for frying)
Instructions
In a large mixing bowl, combine the dry ingredients: all-purpose flour, baking powder, salt, and black pepper. Stir until well mixed.
In another bowl, whisk together the wet ingredients: milk and egg until fully combined.
Pour the wet mixture into the dry ingredients. Stir gently until just combined.
Add the corn kernels, shredded cheese, and chopped green onions to the batter. Fold them in gently.
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
Using a tablespoon, drop heaping spoonfuls of the batter into the hot oil. Flatten them slightly.
Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels.
