2 tablespoons unsalted butter
2 tablespoons brown sugar
1/2 teaspoon cinnamon (optional)
A pinch of salt
For the Greek Yogurt:
1 cup Greek yogurt
1 tablespoon honey or maple syrup (optional)
For Toppings:
Chopped nuts
Fresh fruit (slices of strawberries or blueberries)
Granola or muesli
Shredded coconut (optional)
Instructions
Prepare the Caramelized Bananas: In a medium skillet, melt the butter over medium heat, allowing it to foam slightly without burning. Once melted, add the brown sugar and stir until it dissolves.
Add the banana slices to the skillet, ensuring they are evenly coated with the syrup. Cook for 2-3 minutes, gently flipping them halfway through.
Continue to cook until the bananas are soft and golden brown for an additional 2-3 minutes. If using cinnamon, sprinkle it over the bananas during the last minute of cooking.
Prepare the Greek Yogurt: In a mixing bowl, combine the Greek yogurt with honey or maple syrup. Stir until well combined and smooth.
Assemble the Dish: In serving bowls, place a scoop of the sweetened Greek yogurt. Top it with the warm caramelized bananas and pour some syrup over them.
Add the Toppings: Sprinkle chopped nuts, fresh fruit, granola, and shredded coconut over the top.
Serve immediately to enjoy the warm bananas with the chilled yogurt.
