2 cups cherry tomatoes, halved
2 tablespoons extra virgin olive oil
Salt and pepper, to taste
1 teaspoon balsamic vinegar (optional)
8 ounces fresh burrata cheese
2 ripe heirloom tomatoes, sliced
1 cup fresh basil leaves
1/4 cup basil pesto (store-bought or homemade)
1 tablespoon olive oil dressing (or more, to taste)
Instructions
Preheat your oven to 400°F (200°C). This temperature is ideal for roasting, as it allows the tomatoes to caramelize without burning.
In a mixing bowl, combine the halved cherry tomatoes with olive oil, salt, pepper, and balsamic vinegar. Toss until evenly coated.
Spread the seasoned cherry tomatoes on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until soft and slightly caramelized.
While the tomatoes are roasting, arrange the sliced heirloom tomatoes on a large serving platter. Tear the burrata cheese into pieces and place it on top of the heirloom tomatoes.
Once the cherry tomatoes are roasted, allow them to cool slightly before adding them on top of the burrata and heirloom tomatoes.
Drizzle the basil pesto over the salad and top with fresh basil leaves. Finish with a drizzle of olive oil dressing.
