4 ripe bananas, sliced
2 tablespoons lemon juice
1/4 cup brown sugar
1 cup heavy cream
8 oz mascarpone cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup brewed coffee, cooled
2 tablespoons coffee liqueur (optional)
24 ladyfinger cookies
Chocolate shavings or cocoa powder for garnish
Instructions
In a mixing bowl, combine the sliced bananas with lemon juice and brown sugar. Toss gently to coat and let sit for about 10 minutes.
In a large bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, then fold in the mascarpone cheese until smooth.
In a shallow dish, combine brewed coffee and coffee liqueur. Make sure it is cooled.
Dip each ladyfinger into the coffee mixture for 1-2 seconds and arrange them in a serving dish.
Spread half of the marinated banana mixture over the ladyfingers.
Spoon half of the mascarpone cream mixture over the banana layer.
Repeat the process with the remaining ladyfingers, banana mixture, and mascarpone cream.
Cover and refrigerate for at least 4 hours or overnight.
Before serving, garnish with chocolate shavings or cocoa powder.
