Ingredients
Scale:
1 cup uncooked jasmine or brown rice
1 lb ground turkey
1 tablespoon olive oil
3 cloves garlic, minced
1 small onion, diced
1 bell pepper, diced
1 cup broccoli florets
2 green onions, sliced
Salt and pepper to taste
1/4 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha
1 teaspoon lime juice
Instructions
In a medium saucepan, bring 2 cups of water to a rolling boil. Add 1 cup of rice, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed. Fluff the rice with a fork and set aside.
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the sriracha to your taste.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.
Stir in the minced garlic and cook for an additional 30 seconds. Then, add the ground turkey, breaking it apart with a spatula. Cook for about 5-7 minutes, or until browned and cooked through.
Once the turkey is cooked, add the diced bell pepper and broccoli florets. Sauté for another 3-5 minutes until the vegetables are tender. Season with salt and pepper to taste.
Divide the cooked rice among serving bowls. Top each bowl with the turkey and vegetable mixture, drizzle with Bang Bang sauce, and garnish with sliced green onions.
