Ingredients

4 (6 oz) salmon fillets, skinless
1/4 cup fresh parsley, finely chopped
1/4 cup fresh dill, finely chopped
2 cloves garlic, minced
1 lemon, zested and juiced
2 tablespoons olive oil
Salt and pepper to taste
1.5 lbs baby potatoes, halved
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated.
Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy.
While the potatoes are roasting, prepare the salmon fillets by mixing together parsley, dill, minced garlic, lemon zest, lemon juice, olive oil, salt, and pepper.
Place the salmon fillets on a lined baking sheet and spread the lemon herb mixture over the top of each fillet.
Once the potatoes have roasted for 15 minutes, add the salmon to the oven. Bake for an additional 12-15 minutes or until the salmon flakes easily with a fork.
Remove both the salmon and potatoes from the oven. Let them rest for a few minutes, then serve warm.
