2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 tablespoon instant yeast
¾ cup warm water (about 110°F)
1 tablespoon olive oil
4 large eggs
½ cup whole milk
1 teaspoon salt
¼ teaspoon black pepper
1 cup shredded cheese (cheddar, mozzarella, or a mix)
1 cup chopped vegetables (spinach, bell peppers, onions, or your choice)
Fresh herbs (chives, parsley) - for topping (optional)
Red pepper flakes - for topping (optional)
Extra cheese for sprinkling - for topping (optional)
Instructions
In a large bowl, combine the warm water, sugar, and instant yeast. Allow it to sit for about 5 minutes until frothy.
Add the flour, salt, and olive oil to the yeast mixture. Stir until a dough forms.
Turn the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
In a medium bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cheese and chopped vegetables until well combined.
Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and poke a hole in the center to create a bagel shape.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Place the shaped bagels on the baking sheet. Create a small well in the center of each bagel for the quiche filling.
Pour the quiche mixture into the well of each bagel, filling them generously but not overflowing.
Bake in the preheated oven for 20-25 minutes or until the bagels are golden brown and the egg filling is set.
Remove from the oven and let cool slightly before serving.
