1 sheet of puff pastry (thawed if frozen)
1 egg (beaten, for egg wash)
1 pound medium shrimp (peeled and deveined)
1 ripe avocado (diced)
2 tablespoons fresh lime juice
2 tablespoons fresh cilantro (chopped)
1 clove garlic (minced)
1/2 teaspoon chili powder
Salt and pepper to taste
Sliced radishes or jalapeños for garnish
Microgreens or additional cilantro for garnish
Instructions
Preheat your oven to 400°F (200°C).
Roll out the puff pastry on a lightly floured surface to about 1/8-inch thickness. Cut the pastry into 3-inch squares.
Press each square into the wells of a greased muffin tin, creating little cups.
Brush the tops of the pastry cups with the beaten egg.
Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the pastry is p■ and golden brown.
